Tom Yum Soup is my Favorite!!!
If you love the flavors of coconut and chicken soup then you will enjoy this delectable. I had this soup by accident. I was at a Thai restaurant and I the waiter brought to my table the best-looking soup I had ever seen. If you know me you know that I am a soup queen. I’m constantly trying new recipes to add to my growing lists of soup. Why do I love soup? It’s a feel-good kinda thing for me. And many times it is guiltless eating because the soups are usually low in calories and I can eat a little more than usual. I throw all these ingredients in a pot and cook very slow (approximately 40 minutes) and eat to my heart’s desire. It looks amazing when you plate it.
Ingredients
- 1 Tbsp. coconut oil
- 1/2 onion sliced
- 2 garlic cloves chopped
- 3 slices slices ginger (but I have galangal so I use that most times)
- 1 lemongrass stalk
- 2 teaspoons red Thai curry paste
- 4 cups chicken broth
- 4 cups coconut milk
- 2 medium chicken breasts sliced into pieces
- 1/4 lb of shrimp,
- 8 oz. sliced white mushroom
- 1 1/2 – 2 Tbsp. fish sauce
- 2-3 Tbsp. fresh lime juice
- 2-3 green onions sliced thin
- fresh sweet basil for garnish
- a few slices of lime
