I am not eating meat so feel free to substitute beef sirloin or beef tips in this recipe

1 lb Beef Crumbles ( I use Quorn brand or Garden Inn)1 package of mushroom (crimini or portabello)1 tbsp of minced garlic1 small yellow onion5 cups of beef broth2 tbsp of tomato pastesalt and pepper for seasoning1 package of egg noodles1/2 cup sour cream2 tbsp flour

In a large pot add butter and meat. Season as desired until brown. Drain and set aside. Add mushrooms, onions, garlic until tender. Stir in tomato paste, beef stock and bring to a boil. Add noodles until al dente.Combine sour cream and flour in a bowl. I usually add a little of the soup to mix the sour cream and flour. Allow to thicken. Add the beef back to the pot. Adjust seasoning. Add a little parsely or kale.
