I am not eating meat so feel free to substitute beef sirloin or beef tips in this recipe

  • 1 lb Beef Crumbles ( I use Quorn brand or Garden Inn)
    1 package of mushroom (crimini or portabello)
    1 tbsp of minced garlic
    1 small yellow onion
    5 cups of beef broth
    2 tbsp of tomato paste
    salt and pepper for seasoning
    1 package of egg noodles
    1/2 cup sour cream
    2 tbsp flour
  • In a large pot add butter  and meat.  Season as desired until brown. Drain and set aside.  Add mushrooms, onions, garlic until tender.  Stir in tomato paste, beef stock and bring to a boil. Add noodles until al dente.Combine sour cream and flour in a bowl.  I usually add a little of the soup to mix the sour cream and flour. Allow to thicken. Add the beef back to the pot.  Adjust seasoning.  Add a little parsely or kale.
